BBQ Chicken Roll Ups
What You’ll Need
2 chicken breasts
3/4 cups BBQ Sauce of choice
1 cup shredded cheddar
1/2 red onion, chopped
1 bell pepper, diced
2 large tortilla wraps
How to Make it
-Place both chicken breasts in a pot of water and boil for about 10 minutes or until chicken is cooked through
-Place cooked chicken into a bowl and shred with two forks. Alternatively, you can shred them in a blended or with an electric hand mixer
-In a pan over medium heat, saute onions and bell peppers until tender
-Add your onions, peppers, BBQ sauce and cheese to your shredded chicken and mix together
-Place half your mixture into a tortilla wrap and roll it up as tight as you can (like a long, delicious cigar). Do the same with the second tortilla
-Place both roll ups seam down on a pan over medium/low heat, gently crisping it on all sides
-When nice and golden & crispy, remove from heat and slice in the center
-Enjoy with some avocado and ranch for dipping!
