Jalapeno Popper Chicken

Just kidding, here is the recipe
What You’ll Need
2 chicken breasts
1/4cup cream cheese, full fat - please do not use low fat, it won’t be the same
1/2 of a jalapeno, finely chopped (more if you’re a spicy person)
2 tsp taco seasoning, separating in half
1/2 cup shredded marble cheese, separated in half
1 cup panko bread crumbs
2 eggs, beaten
How to Make it
-Preheat oven to 375 degrees
-Prepare a baking sheet with a wire rack on top of it sprayed with some oil to ensure even flow of heat (makes it crispy)
-Carefully butterfly your chicken breasts, making sure you don’t cut all the way through (like making a pocket to fill with goodness)
-In a small bowl, combine cream cheese, jalapeno, 1 tsp taco seasoning and 1/4 cup grated cheese
-Equally spread the cream cheese mixture into each chicken breast, folding them over to trap the goodness inside
-In separate bowls, put your beaten eggs and your panko mixed with 1 tsp taco seasoning and remaining cheese
-Dip each chicken breast carefully into the eggs, then the panko (for extra crispiness, do this twice for each breast)
-Place the chicken on the wire rack and bake for 30 minutes
-let cool for 5 minutes before slicing through
-Enjoy with some street corn and charred red peppers
