Blueberry Puff Pastry

What You’ll Need

For the Jam

3/4 cup blueberries

1/4 cup sugar (less if you’re a tarty mcfarty)

1 Tbsp lime or lemon juice

1/2 tsp chia seeds (can used ground or whole)

For the Pastry

frozen puff pastry

4 oz cream cheese

1 tbsp sugar

3/4 cup blueberries

1 egg

1 Tbsp water

How to Mak it

Let puff pastry start to thaw

Jam

1) in a small sauce pan over medium heat, add all ingredients and let simmer for 15 minutes. Stir often

2) Remove from heat and set aside

3) you can also use premade jam

Pastry

1) preheat oven to 400 degrees

2) when pastry is semi thawed, roll it out onto a floured surface and slice in half. You can also do smaller sections if that’s what you prefer

3) place on a lined baking sheet and fork the middle so it won’t puff when baking. Leave some space around to puff though

4) soften your cream cheese by mixing it up and add your Tbsp of sugar to sweeten the goodness up

5) Spread a thin layer of cream cheese mixture onto your pastry, leaving the edges clear

6) add your fresh blueberries to your jam and mix it all up

7) dollop the blueberry mixture onto the cream cheesed area of your pastry

8) finally, make an egg wash by beating your egg and water together and brush it on the showing bits of pastry

9) bake for 15-20 mins, keep an eye on it and remove when edges are golden
