Couscous Salad

What You’ll Need

1 cup couscous

3/4 cups boiling hot broth (water works in a pinch)

1 cup roasted sweet potato, cubed

3/4 cups cherry tomatoes

1/2 cup feta, crumbled

1/4 cup toasted pumpkin seeds (or pine nuts)

1 cup arugula or spinach

Olives are optional, but I think they’re yuck

S&P to taste

How to Make it

Cook couscous by pouring hot broth over it in a large bowl, cover for 5 minutes and voila! It’s cooked. Fluff with a fork.

Add the rest of your ingredients to the bowl and toss it together, then you’re all done!
