Nectarine & Goat Cheese Salad w Basil Vinaigrette
What You’ll Need
Salad
2 Chicken Breasts, grilled or cooked how you most enjoy
2 cups lettuce of choice
2 fresh nectarines, sliced
1 avocado, sliced
2oz Goat Cheese
1/4 cup candied walnuts (recipe in notes at end)
Vinaigrette
1/4 cup fresh basil leaves
6 Tbsp olive oil
2 Tbsp balsamic vinegar
1 Tbsp maple syrup
S&P to taste
How to Make it
-Put all dressing ingredients into a blender and blend until smooth
-Mix all salad ingredients in a large bowl
-Eat up, butter cup!
NOTES
To make candied walnuts, melt butter in a large fry pan on medium-low heat. Add walnut pieces and white sugar, melt very slowly and stir often until coated. Be very careful because it can burn very quickly, so once it’s coated, take it off the heat completely and place in a bowl. Do not let it sit in the warm pan!
