Simple Mushroom Pasta
What You’ll Need
1lb pasta of choice
4 Tbsp butter, divided into two
12oz cremini mushrooms, sliced
4 garlic cloves, sliced
1 cup spinach
1/2 cup grated parmesan cheese
S&P to taste
How to Make it
-Cook pasta according to package instructions
-In a medium fry pan, melt 2 Tbsp butter and toss in sliced mushrooms to cook for a few minutes
-Add in your garlic to cook for a few minutes, gently stirring
-Add the rest of your butter and the spinach to let it wilt down
-Once wilted, add your parmesan cheese and stir together
-Using a mug, reserve half a cup of your pasta water and drain your pasta, then add it to your mushroom/spinach mix
-Add your reserved pasta water, salt and pepper and mix well
-Enjoy immediately!
