What You’ll Need

1lb Spaghetti Noodles

1 1/2 cups low sodium broth

1/2 cup smooth peanut butter

1/3 cup soy sauce or Tamari

1 Tbsp Chili flakes or 1.5 Tbsp Sriracha (depending on how spicy you like it)

1 Tbsp brown sugar

1 Tbsp rice vinegar (apple cider vinegar works too)

2 tsp sesame oil

1 Tbsp cornstarch

1 package lean ground beef

1 bell pepper, sliced

1 cup fresh spinach

3 cloves garlic, minced

1 Tbsp freshly grated ginger or 1.5 tsp ground ginger

1/2 cup chopped cilantro

1/2 cup chopped peanuts

How to Make it

-In a small sauce pan on medium-low heat, mix together broth, peanut butter, soy sauce, sesame oil, brown sugar, vinegar & chili flakes

-Let warm up and become smooth, stirring frequently

-In a small bowl, put your cornstarch and about 1/4 cup of your warmed mixture to create a slurry and then add to your mixture and stir to let the sauce thicken. Take off heat and set aside

-In a large pot, cook your spaghetti noodles according to package instructions

-In the meantime, in a large frying pan, brown your ground beef and discard of any extra grease

-Add your bell pepper, spinach, ginger and garlic and let cook for a few minutes, stirring occasionally

-Add peanuts and pour your previously made sauce over your meat mixture. Stir well

-Mix in your cilantro and noodles, toss to coat and serve warm

-Top with more peanuts and cilantro if you’d like!
